This is Tatenokawa’s limited-edition Hiyaoroshi released every autumn.
This year, we incorporated the traditional Kimoto method into our pursuit of a clean and transparent style.
The result is a sake with gentle aroma and acidity, offering rich, well-defined umami and a deep, complex flavor with every sip.
